Additionally, both sugar and salt contribute to the Maillard reaction.
The Maillard reaction is intricate, so much so that only recently have scientists started to unravel its nature. Although it's not fully understood, the fundamental concept is known: The Maillard reaction consists of numerous concurrent chemical reactions that take place when proteins and sugars in food are altered by heat, resulting in new flavors, aromas, and colors.
Hence, we will incorporate salt into our recipes when necessary, and sugar when appropriate. However, we will limit their use, as they are not intended as fillers or for any purpose that does not enhance flavor. Our goal is to use them solely to achieve the finest tastes in our seasonings. Should you wish for additional salt in your meals, you are welcome to add as much as you please.

Our selection includes corn starch, gluten-free baking powder, masa harina, and manioc flour, all of which are free from gluten and nuts.
